PROJECT TIBURON The goal of Project Tiburon is to make Tiburon the “first trans fat-free city” in America with respect to the cooking oils used in restaurants. The partial hydrogenation of oils creates trans fats. Trans fats are the worst kind of fats from a health standpoint. Partially hydrogenated oil is an artificial ingredient that should not be in our food. It drives up LDL cholesterol (the bad kind), lowers HDL cholesterol (the good kind that we need), and causes other significant health problems. • In 2002, the National Academy of Science’s Institute of Medicine stated that we should consume as little partially hydrogenated oil as possible. • In 2003, Denmark passed a law effectively banning partially hydrogenated oils from its food supply. • In 2003, the U.S. Food and Drug Administration issued a regulation requiring packaged goods to list “trans fat” on the Nutrition Facts label starting in 2006. A warning may also be included on the label telling consumers to consume as little as possible. • In 2003, the Secretary of Health and Human Services stated the U.S. Government’s position. He said: “Trans fats are bad fats. The less trans fat you and I eat, the healthier we will be." There is absolute unanimity of opinion that trans fats are harmful. Nevertheless, most restaurants in this country continue to prepare foods using partially hydrogenated oils. It is not just the fast-food restaurants. Even “better” restaurants and many high-end establishments use partially hydrogenated oils. We do not use partially hydrogenated oil to prepare food in this restaurant.
